Pantry Challenge: Milo Slice

The great thing about "slice" is that unlike cake or biscuits, there isn't really a required recipe or a formula - as long as you've got a good balance between fat, flour and sugar you're good to go.  A slice is a great opportunity to use up random baking stuff from your pantry since it's pretty hard to go wrong.

This was based on a recipe for a Milo slice from Lift the Lid which I adapted and altered to use up a few things.  The trick with any slice recipe is, essentially, that no matter what flour, oats or dried fruits you add, you add enough liquid (melted margarine usually) that it holds together and that you don't dry it out by cooking it for too long.


Milo Muesli Slice
serves about 10

1 cup wholemeal flour
1 tablespoon baking powder
1/2 cup shredded coconut
1/2 cup Milo
3/4 cup oats
1 x 40g sample pack of a muesli base (optional, obviously!)
2 tablespoons flaxseeds
2 tablespoons dried cranberries
2 tablespoons packed brown sugar
2 teaspoons vanilla essence
2 tablespoons milk
1/2 cup melted low-fat margarine

Preheat oven to 180 degrees.
Combine the dry ingredients and vanilla in a large bowl, then stir in the margarine and milk.  The mixture should hold its shape like a firm cookie dough: if it's too crumbly add a little milk.
Press the prepared mixture into a slice or loaf tin and bake for twenty minutes.  Once cooked, leave to cool for twenty minutes before turning out.  You'll need to wait until it has completely cooled before slicing.  

This would be even yummier topped with melted dark chocolate!
